Strawberry Shortcake

We usually spend Memorial Day with friends and I always volunteer to bring dessert. I love to bake and Sweety loves his Strawberry Shortcake. I thought I'd show you how I make mine.


We live in the country and are fortunate to have a strawberry stand less than five minutes from our house.

I bought half a flat and washed and trimmed the stems off. I cut them in half and sprinkle them with sugar. Lots of sugar. No need to skimp here. Lots of sugar means lots of juice!

Then I make the shortcakes. I know there are lots of fancy recipes for shortcake out there. But this is what our family (we're from the midwest) has used forever and it makes the best shortcakes. So toss out your need to be new and inventive, get yourself some Bisquick and just follow the recipe.


This is what they will turn out to be. This is a double batch. Sweety likes his shortcakes assembled while they are still warm from the oven.



Now, I'm an all or nothing kind of gal. So do not even think of buying the whipped cream that is frozen, comes in a plastic tub and starts with C*** W***. That is a great product and has many uses but not in shortcake! Get some heavy whipping cream and whip it up with a little vanilla and a little more sugar.


This is the finished product. Sweety's mom made shortcake using those little spongey cakes from the grocery store, strawberries that hadn't been sweetened and (gasp!) C*** W*** ! This dessert could have been the deciding factor that made him propose. What do you think?

Oh, one more ingredient is needed and it's the most important. Assemble a room full of family and friends that you love and enjoy!

Oh, say, we must be sisters. And if those biscuits were made ahead of time, I slice them and toast them under the broiler just long enough to heat them. Ahhh, so good! DH was raised on the dinky little packaged sponge cakes with the CW fluff. This has been an eye opener for him. :-)

Yum,yum,yum! You are so right on. Bisquick shortcakes are the best and the easiest. After trying many other recipes I always return to what I grew up with. Your photos are so pretty - I just wish I could take a bite! Take care.

Can't believe that it is that time of the year that local stands are selling strawberries. Here it won't be for another few weeks. But fresh picked ones are the best. Your strawberry shortcake looks absolutely decadent!! I would come over any time and help you finish it off.

Jean - the Bisquick shortcakes are the ones I remember from my childhood and to me they are the only true shortcakes. Did you get those strawberries from Vella Farms? I remember they had wonderful strawberries and blackberries - yum!!

Ooooh Yum!!! We had Strawberry Shortcake yesterday too. Although, I'm not sure why we always call it Shortcake -- we always make an Angel Food cake instead!

There is nothing that tastes like summer more then strawberry shortcake and better yet the Bisquick kind. That is a delicacy in my family.

Love your beautiful reminder.. and the pictures are great. We used to make this at the Pre-school and spread the bisquick into a pizza pan, baked and then covered with strawberries...real whipped cream was sometimes a lesson but most times the kids fought over the reddi-whip. We did this during the summer with any fruit that was in season.

I don't use Bisquick much anymore, but it is the BEST way to go for Strawberry Shortcake!! I have to admit, I always put a bit more sugar in the batter than Bisquick calls for. I only use real whipped cream or Breyer's Natural Vanilla ice cream. It is so nice to see that someone else makes their Strawberry Shortcake like this. Thanks for sharing.
